Cucumber Mint Yogurt (Raita)


  • Take 2 cups of yogurt. Mine was home made so it was more runny than the store bought and I didn't have to add any water. Depending on your consistency, you will have to add some water so that it becomes soupy.
  • Whisk the yogurt smooth
  • Grate half a peeled cucumber into the yogurt. I peeled mine because I had the thick dark green skinned cucumber. If you get the English pickling cucumber, with the thin light green skin, then dont peel it, just rinse. You can grate some carrot too (optional).
  • If you have some fresh mint at hand, finely chop few leaves into the yogurt.
  • Add salt to taste, 2 tsp of dried crushed mint, 1 tsp roasted cumin pwd, 1 tsp pink (rock) salt, 1 tsp of red chilly pwd. Refrigerate to serve cold.
  • This savory preparation of yogurt is called "raita" in Hindi. Indians consume a lot of fresh yogurt with their daily meals, raita is a variation to the regular plain yogurt. It can also be made with diced tomato/cucumber/onion with similar spices as above.
