Rice pancakes "Uttappam"
Uttappam is essentially a savory pancake made with rice and lentil batter. Rice and a specific lentil (white urad) are soaked in a specific ratio overnight, then blended to a smooth batter and fermented for 4-5 hours. Throw in choice of vegetables, salt, some water to bring it to a spreadable consistency. Pour the batter on a heated oiled skillet, cook for 5-7minutes till golden brown and flip over to cook the other side.
When rushed for time, I just buy the store packet of Uttappam mix (Indian store, any brand works), add water and vegetables and I am ready to make my pancakes. The packet mix is a dry rice/lentil flour with some leavening and dehydrated green chillies.
This time I added in: chopped onions, shredded carrots and parsley. The traditional option is: onions, tomato, green chilly, cilantro. I made mini uttappams and served them with a coconut chutney.
For the chutney:
Blend the following ingredients:
-handful of roasted, peeled peanuts
-3 tbsp of frozen (fresh) grated coconut (Indian store)
-salt to taste
-1 cup homemade yogurt
-2 green chillies
-1 tsp of sugar
-few twigs of cilantro
You can store the batter with the vegetables for a couple days and make fresh warm pancakes for breakfast. I enjoy them with hot ginger tea.
