Broccoli garlic fried brown rice



Ingredients:


Vegetables -
1/2 onion sliced
7-8 broccoli florets
1 garlic pod diced
1/3 cup corn kernels or if you have baby corn
1 1/2 cup day old brown rice

Spices -
2 tbsp oil (mixture of sesame oil, corn oil)
1 tbsp Sriracha sauce
4-5 tbsp low sodium soy sauce
2 tbsp rice vinegar
1 tsp brown sugar
1/2 tsp dry ginger pwd
1/2 tsp white pepper pwd
salt to taste

Garnish -
chopped chives, and/or garlic greens

Method:
  • Start with the oil in a pan, heat it for 30-40 secs, add the brown sugar and let it melt
  • Throw in all the vegetables, stir for 1 min on high (Go ahead and improvise! You can add in bamboo shoots, red peppers, carrots, water chestnuts, peanuts, tofu ...just some ideas)
  • Add in all the spices, stir, and lid for 3 mins on high
  • Add in the rice and stir well for another 3-4mins
  • If you want the broccoli cooked more, cook for additional 1-2mins
  • I had fresh chives and garlic greens in my garden so that's what I used for garnish

Mummy, remember to cook the brown rice with slightly extra water than usual, I soak it ahead of time and then use little more than 2:1
