Tortilla soup

Pressure cook the following with vegetable stock: 1 peeled carrot, 1/2 yellow onion, few cilantro twigs, small piece of a jalapeno, and 1 tomato.

After 1 whistle, let the contents cool for 10mins. Add in: salt, paprika, and roasted cumin powder.
Now blend everything to a smooth consistency, adding in more vegetable stock, 1-2 tbsp of plain yogurt, 1 tsp lemon juice and handful of tortilla chips.

After everything is a good blend, pulse the blender with some thawed frozen corn kernels and cooked brown rice.

Garnish with more crushed tortilla chips, cheddar cheese and some fresh cilantro.
