Squash parathas

Paratha is a type of Indian flat bread. It can be stuffed or the ingredients can just be bound in the dough. Popular stuffing mixtures are potato, paneer (cheese), cauliflower, radish. The kind described below is not stuffed, but the vegetables are mixed in with the dough.

Grate any kind of squash, and onion.
Mix in with mostly wheat flour, 2 tbspn of gram flour, 2 tbspn of semolina.
Add salt, turmeric (2 tsp), red chili powder (2 tsp), garam masala (Indian all spice, 2tspn), 1 tspn sesame seeds, 1 tspn cumin seeds, 1 tspn of fennel seeds, 1 tbspn oil, 1 tbspn lemon juice.
Bind it all with no water.
The squash and salt together will release a ton of water. Add in more flour to help with consistancy if its still very sticky, or you will have trouble rolling it.
Roll into flat rounds and cook on pan with very little oil on each side.

Health benefits:
Squash is an excellent source of vitamin A(in the form of beta-carotene), a very good source of vitamin C, potassium, dietary fiber and manganese. Beta-carotene, has been shown to have very powerful antioxidant and anti-inflammatory properties. Additionally beta-carotene is beneficial to blood sugar regulation, and may help reduce the risk of colon-cancer.
