Plantain chips
Wanted to share a snack idea - home made plantain chips - quick and simple, plus you know whats going in them. So get a ripe plantain. Peel. Cut into slices about a 1/4th of an inch. Pour some olive oil in a non-stick pan, sprinkle some salt and place the plantain slices flat. After about a minute turn them over and cook till both sides are warm golden. You can make them as crispy as you want but I like them softer. Plus they are easier to chew on for my (almost) toothless toddler :)
