Green onion scramble



In Hindi we call this preparation - pyaz ka besan. Pyaz is onion and besan is gram flour.

I chopped up about 15 green onions and heated 3 tbsp of oil.

For the seasonings, keep these ready:
1 tsp black mustard seeds
pinch of asafoetida
1/2 tsp of turmeric pwd
1 tsp of red chilly pwd
pinch of garam masala (Indian all-spice you can get from the Indian store)
1 tbsp of lemon juice
salt to taste.

Add mustard seeds to the hot oil, wait till they splutter, then add in rest of the seasonings, and green onion and saute for 1-2mins, followed by 3 tbsp of gram flour (Indian store). Mix everything thoroughly to avoid lumps in the gram flour or besan. Sprinkle some water and lid it for another 7-8mins on medium to low flame. After which time, you should be able to smell aromas of cooked besan, its distinct if you know what you are sniffing for. And the spicy, tangy scramble is ready. Have it with roti and daal, or wrapped in a burrito or just plain, its so yummy.

tried it with leeks and it turned out really good;
very easy to make.
