Asian string beans

I get my string beans from our local Indian store. In Hindi its called cholafali. These are beans from the plant that produces black eye beans.

  • I chopped the beans (about 25 strings) into less than 1 cm long pieces, peeled and chopped fine 1 potato and rinsed both.
  • Heat 2 tbsp of oil, added 1 tsp of mustard seeds, wait till they splutter, then add 1 pinch of asafoetida, 1 tsp turmeric pwd, and 2 tsp of red chilly pwd.
  • Now add in the chopped potatoes and lid the container for 6-7mins to allow the potato to cook.
  • Then add in the cut beans, salt to taste and lemon juice.
  • Mix everything and lid the container for 10-15mins on medium flame, stirring intermittently.
