Cilantro lentil rice

Back home from a long day, have nothing prepared and want something quick, warm, healthy and savory? Read on..



Ingredients:

1/2 cup rice
1/2 yellow split lentil (chana daal)
1 yellow onion
2 tbsp ghee
pinch of asafoetida
1 tsp mustard
1 green chilly
1/2 tsp turmeric
1 tsp red chilly pwd
1 tsp garam masala
1/3 cup green chutney
cilantro to garnish
salt to taste
1/4 fresh lime

Rinse the rice and lentil mixture and set aside.


In another pot, heat the ghee, add in the mustard, wait till they splatter, then asafoetida, turmeric, red chilly pwd and chopped onions with the green chilly to saute the mixture till the onion become golden.


Then add in the rice-lentil mixture into the onions, along with the green chutney, salt to taste, garam masala and saute for 2-3 minutes. Then add in 2 cups of water and pressure cook for 2 whistles on medium. It takes about 7-8 mins.


Allow the contents to cook, serve yourself with a garnish of more fresh cilantro and a squeeze of fresh lime. And dinner is ready. Finish up with a serving of home made yogurt or have it with the rice.

Just realized I didnt describe how to make chutney - blend 1 bunch cilantro, 3 hot green chillies, 1 garlic pod, salt, pinch of turmeric, handful of peanuts, juice of 1/2 a lemon with some water
