Garlic Pineapple Bokchoy stirfry


Ingredients: (2 servings)
2 tbsp oil, 2tsp chilli oil, 1 tsp sesame oil
blend of 2 garlic pods, chunk of ginger and 1 green chilly pepper
1 tsp white pepper pwd
1 tsp all spice
salt to taste
soy sauce to taste
2 tbsp brown sugar
1 tbsp molasses
2 tbsp rice vinegar
1 onion sliced
1/2 red pepper cubed
5 baby bok choy cut at stem and rinsed
2 slices of fresh pineapple in chunks
8-10 cubes of spiced tofu

Method:
Heat the oil mixture for 1-2mins, then add in the blend of garlic, ginger, chilly; white pepper, brown sugar and all spice. Stir for 30 secs, followed by the onion, peppers, pineapple and tofu together. Give all the vegetables a good stir for 2mins. Then add in the bok choy, pour soy sauce, molasses and rice vinegar, with salt to taste. Fold in the bok choy. Sprinkle some water and lid it to cook for 3-4 mins. Done!

Health Benefits:
Bok choy is a cabbage family vegetable but it looks nothing like the regular cabbage. Its a Chinese vegetable, high in vitamin A, vitamin C, beta-carotene, calcium and dietary fiber. The leafy vegetable is low calorie, low carb, and contains potassium and vitamin B6. Some of the vitamins found in bok choy are also powerful antioxidants, making this tasty cabbage an extremely healthy treat. The beta-carotene in bok choy can help the risk of certain cancers and is known to reduce the risk of cataracts.
